American French Dressing
The name says it. A fusion of American and French flavors combined to make one unique dressing. It’s a tangy-spicy-sweet combination, great for a wide range of salads.
Yields: serves 1
Ingredients:
3 tbsp. ketchup
3 tbsp. red wine vinegar
1 tbsp. sugar
1 tsp. dry mustard
1⁄2 tsp. paprika
Pinch of white pepper
1 egg yolk
3⁄4 cup extra-virgin olive oil Salt, to taste
Method of Preparation: Put ketchup, sugar, vinegar, dry mustard, white pepper, paprika, and egg yolk into a bowl; then whisk well. Slowly drizzle the olive oil while whisking the mixture constantly until it is smooth. Season it with salt to taste. Voila! Cover and refrigerate until needed. It can last up to one week.
Blueberry Vinaigrette
Blueberry as a dressing? Yes, it’s possible! This yummy dressing is great for chicken salads or green salads.
Yields: serves 4
Ingredients:
1 cup fresh or frozen blueberries, thawed, divided
2 tablespoons orange marmalade
1/4 cup vegetable oil
2 teaspoons lemon juice
1/4 teaspoon salt
1 teaspoon Dijon mustard
Method of Preparation: In a blender, mix half of the blueberries with the other ingredients; blend until a smooth dressing forms. Put the dressing into the salad and sprinkle the blueberries remaining.
Carrot Ginger Dressing
This dressing is perfect with any tossed salad or any main dishes. Enjoy!
Yields: about 2 cups
Ingredients:
1/2 lb carrots (3 medium), coarsely chopped
1/4 cup chopped shallots
1/4 cup chopped peeled fresh ginger
1/4 cup seasoned rice vinegar
1 tablespoon Asian sesame oil
1 tablespoon soy sauce
1/8 teaspoon salt
1/4 cup water
1/2 cup vegetable oil
Method of Preparation: Blend carrots in a food processor until pureed. Add chopped ginger, rice vinegar, chopped shallots, soy sauce, salt, and sesame oil and mix until shallots and ginger are minced. Add vegetables while the motor is running. Transfer the mixture to a blender. Add the water and blend for 2 to 3 minutes until smooth.
Coconut Cream Dressing
This slightly sweet dressing makes a fruit salad and plain coleslaw exciting. Also great when drizzled over steamed veggies and main dishes.
Yields: about 1 cup
Ingredients:
1 (8.5 ounces) can cream of coconut
1/4 cup cider vinegar
1 (0.7 ounces) package dry Italian salad dressing mix
Method of Preparation: In a small-sized bowl, combine all the ingredients; then mix well. Serve, or chill until ready to serve. You can refrigerate it for up to 1 week.
Country Buttermilk Dressing
This Country Buttermilk Dressing will make every salad lip-smacking good!
Yields: 2 cups
Ingredients:
1 cup mayonnaise
1 tablespoon minced onion
1 cup buttermilk
1/4 teaspoon garlic powder
1 tablespoon minced fresh parsley
Method of Preparation: Combine all ingredients, and mix it well until incorporated. Chill at least 2 hours before serving.
